It’s simple enough… no fancy bells or whistles. No real culinary skills required to make it. But it certainly hits the spot.
A crisp crust and a perfect serving size that won’t make you cringe at the price tag. Plus it’s healthier with a better controlled serving size (rather than eat the entire pie!).
At the end of the day, it’s all about simplicity and solving the ongoing problem we all seek to fill the pizza void.
Mini Gluten Free Pizza Recipe
Readers often ask me for simple recipes that don’t take too long to make. As well as those that hit the spot when a craving comes on… like pizza.
If you’ve ever bought gluten free pizza, you know it’s expensive. A personal pie is sometimes $5 to $10 more expensive than a gluten-filled pizza. Frozen pizza offer up a pretty hefty sticker shock.
To be honest, I don’t always feel like shelling out double for a thin crust tiny gluten free pizza.
And I don’t always feel like waiting for it to be made special or baked in the oven.
One day, I got a serious hankering for gluten free pizza and so this mini gluten free pizza recipe was born.
For the first time, I saw the Hilary’s Eat Well veggie patties in my freezer as a simple solution. And boy, was it really good!
Ingredients for the Mini Gluten Free Pizza Recipe
My absolute favorite is the Adzuki Bean patty that’s gluten free, organic, corn-free, soy-free, and vegan.
Lightly toasted, it’s the perfect gluten free pizza crust replacement that’s ready from the freezer in about 7 minutes.
Truthfully, I’ve loved the veggie patties from Hilary’s Eat Well for a long time. They make a fantastic side of healthy, gluten free carbs to a salad.
And because of their texture, they fill that void of eating something crisp making them a great (and healthier) alternative to eating chips.
If you’re vegan, these are by far the best veggie patties I’ve ever had.
And their new veggie breakfast sausages are Ah-MAZING. No soy and meat-free, but they completely nailed the incredible flavor that’s undeniably a breakfast sausage.

- 1 package Hilary's Eat Well Adzuki Bean patties contains 2 veggie patties
- 1/2 cup Your favorite thick pasta/marinara sauce
- 1/8 cup Cheese or Vegan cheese alternative
- Your favorite pizza toppings just make sure they are GF!

- Follow instructions on the Hilary's Eat Well box to toast your patties from the freezer. I recommend baking them a few minutes extra to make your "crust" more crisp which is especially important since you'll be adding sauce on top of it.
- In the mean time, get your toppings ready! If you need to chop veggies or brown/caramelize them, now is a good time to do that.
- When patties are ready, spoon over top enough sauce to fill most of the center portion of the patty.
- Add veggie toppings now so that they stay put. Then add your cheese of choice. Lastly you can add other toppings (like meats if you so choose).
- Put the pizzas back in the oven for a few minutes until the cheese is melted.
- Remove from oven and allow to stand for 2 minutes so that the cheese doesn't get all messy when you slice the pizzas in half.
If you want a Mexican flare for this mini gluten free pizza recipe, swap out the marinara sauce for a chipotle salsa. Amazing!!!
Depending on your appetite, you may only want make one veggie patty at a time. I have found that if I'm really hungry and having these mini gluten free pizzas as a meal, then two veggie patties will do. But if it's just a snack or part of a meal, one is fine.

I can’t eat many of the traditional pizza toppings due to allergies to tomatoes, peppers, and most dairy. I fortunately can eat goat cheese, so I combine an olive oil garlic sause with spinach, mushrooms, grilled onions, and goat cheese crumbles to make a yummy Greek style pizza.
This website has been saving me this past week! I have to say my fave toppings are simple. Spinach, fetta, tomatos, and a little bit of salt and olive oil!!!

I love sliced fresh tomatoes, especially the Campari variety from Wegmans organic dept. They just seem to taste like real tomatoes even in the dead of winter. I also use fresh basil leaves, a small amount of extra virgin olive oil and then sprinkle with feta cheese. Its so simple but very tasty! If I feel a little more adventurous, I’ll add a handful of sliced black olives. Yum

Just sauce and cheese. old school. classic.
I have food allergies as well. So I decided to use gluten free pita bread as my crust. I use roasted red pepper spread on top. I slice fresh mushrooms, red onion and fresh red pepper to put on the pita. I put in the oven about 8 or 9 minutes. Then I put my prepared with olive oil and red wine vinegar green salad on top. Great Salad Pizza!!

We’ve just recently started making cauliflower crust pizzas and although they are tasty, they have cheese in them as a binder and they take a bit of preparation. My favourite toppings are peppers, mushrooms, pineapple,a bit of goat cheese and our homemade pizza sauce with fresh garlic. These Hilary’s Eat Well patties sound yummy and much easier to prepare on those nights when time is short, but you want pizza!
Spinach, mushrooms, and GF sausage! Or maybe swap out the traditional pizza sauce for some GF barbecue sauce and top with chicken, onions, and pineapple.
