One of my fondest memories of summer includes making s’mores around the grill after dinner. But going gluten free in 2008 definitely put a stop to this practice. Thanks to this simple recipe, these fun gluten free s’mores pudding cups bring back fond memories!

Summer is all about getting people together and eating outdoors to enjoy the fresh air! Lighter recipes compliment grilled foods making them a huge hit. (Here’s one of my absolute favorite summer party gluten free recipe guides!)

Plus this recipe is great for kids (or the grand kids) to both help assemble and eat. Now you don’t have to worry that they’ll get too close to the fire or burn their mouth on super hot gluten free s’mores.

Gluten Free S’mores Pudding Cups Recipe

This recipe is surprisingly easy to make (especially for someone like me who doesn’t bake).

The pudding is made with so few ingredients. It’s possible to upgrade some of the ingredients if you want to make your gluten free s’mores pudding cups healthier.

You can also make the recipe to go further by serving smaller portions. Instead of using a full mason jar, you could easily use a shorter glass, dish, or mason jam jar.

The pudding can be made ahead of time so that you can quickly assemble the individual desserts just before serving them.

Either way, this is a super easy recipe that you can make ahead of time and assemble at a party or a BBQ that everyone will love. Plus all of the ingredients are vegan so those who are plant-based will be able to enjoy this yummy gluten free dessert!

Gluten free tapioca starch – The lower carb option to use is kudzu starch. A lot goes a long way and will produce the same result.

Gluten free chickpea flour – Since there is such a high rate of cross contamination, you must look for a flour that’s clearly marked gluten-free. While there are plenty of chickpea flours available online, not all have been produced in a way that is safe for you.

Gluten free vanilla extract – If you don’t know, not all vanilla extract is gluten free. That’s why you’ve got to double check that the vanilla extract you buy is clearly marked gluten free rather than relying on ingredients lists that can hide gluten.

Coconut palm sugar – Lower GI sugar with more minerals than regular sugar, coconut palm sugar is a great alternative that can be used 1-for-1 in recipes. I prefer it over white sugar that’s exposed to a lot of pesticides and is NOT vegan (due to bone char used in the decolorizing process).

Gluten-Free S’mores Pudding Cups Recipe

Instructions

Prepare gluten-free S'mores Pudding:
  1. Pour 2 cups of dairy-free milk into a medium saucepan and whisk in the sugar. Bring to a simmer and stir until sugar is dissolved.
  2. In a small bowl whisk together the chickpea flour, additional ½ cup dairy-free milk and the tapioca starch until thoroughly blended. Drizzle into the warmed milk and stir until thickened, keeping on low-medium heat. This mixture will continue to thicken as it cools, so don’t worry if it doesn't look too thick.
  3. Remove from heat and pour into a glass bowl, then stir in the vanilla. Top with plastic wrap to prevent skin from forming. Put in refrigerator to chill, or put aside to cool down.
  4. Stir the Mini Chips into the cooled pudding.
To assemble the cups:
  1. Layer about 4 Crunchy Vanilla Honey Graham Mini Cookies in the bottom of fun glass jars or bowl. Then add in a spoonful of extra Mini Chips and top with a few spoonfuls of the pudding. Continue layering until you have used all the pudding.
  2. Finish with some more cookies and a square of Ricemilk Chocolate.

Recipe Notes

You can easily make the pudding ahead of time and allow it to sit in the fridge. I would recommend assembling the cups not long before they are served so that the cookies retain their crunch!
