Vegan Peach Ice Cream (GF, DF, Paleo option)

  1. Add everything to your blender and then add the lid with the center piece removed.
  2. Turn the variable speed knob down as low as your machine will allow before switching it on and insert the long plastic tamper (you must have this in order to use your blender) through the opening.
  3. With one hand on the tamper, use your other hand to switch on the blender. Push the fruit using the tamper into the blades and work quickly because the longer the blender is running, the more melted the ice cream will be.
  4. If the mixture isn’t getting creamy, turn the blender off, add a Tbsp or two more liquid and then blend again.
  5. Within a minute or so, the ice cream should be done. Remove it and plate it or use small plastic containers to create individualized servings that can be stored in your freezer.

Recipe Notes

You can easily make larger batches at the same time. Adjust the liquid as necessary to get the correct creamy consistency. If the ice cream gets too soft, place it in the freezer for a bit until it’s more firm.

After freezing additional servings, allow them to sit out for a few minutes before eating so that they can soften up.
