There are some things in life that you miss when you have to give them up, especially when a good substitute just ISN’T possible. Or, when you simply can’t ‘cheat’ once in awhile and try even a little. The natural inclination is to truly miss what you can’t have. But that’s life, right?
For me, eggs fall into that category since they’re one food that I absolutely can’t ‘cheat’ on or just try periodically in their whole form. I’ve found that I can have them if they’re mixed into something like gluten-free bread or a gluten-free cake, but not if it’s one of the main ingredients. Whole eggs are off the table and that sadly has also included mayo. Three and a half years, no whole eggs.
The first little scoop tasted like heaven to me. A good match for my memory of mayonnaise, Earth Balance’s Mindful Mayo felt like I was able to finally enjoy a part of life that I’d been missing. For the first time in three and a half years, mayo is now back on the table with ingredients that don’t bother my system and are actually decent for a vegan version of a traditional condiment favorite.
This is honestly one product that I’ve totally flipped over and have personally thanked reps from Earth Balance for this product when I visited their booth at Natural Foods Expo East a couple of weeks ago. Mindful Mayo made from Olive Oil has changed my ability to enjoy an old favorite without tons of junk and soy!
