Gluten Brain Fog & How to Beat It with Dr. Vikki Petersen
This week’s Gluten Free School Podcast is joined by Dr. Vikki Petersen to talk about gluten brain fog and other neurological effects gluten has on the brain.
In this episode, we cover these topics:
01:28 – Introducing Dr. Vikki Petersen, co-creator of the HealthNOW Elimination Diet and author of The Gluten Effect. Dr. Petersen explains how research supports the existence of gluten sensitivity, why doctors refuse to test for celiac disease and the miraculous changes seen in patients who have eliminated gluten from their diet.
05:52 – Gluten sensitivity and celiac disease go beyond classic digestive distress — including it’s massive effect on brain because of the opiate-like response caused by gluten.
10:40 – How gluten gets from the gut all the way to the brain, and how gluten effects other systems of the body.
13:40 – How quickly the immune system responds to gluten and ‘silent’ symptoms to look for.
16:31 – What is zonulin and why it is such a big deal for those with gluten and food sensitivities.
20:17 – Other considerations when neurological issues persist, even after going gluten free. Why going gluten free is not always enough and cross reactivity explained. What is really happening when you feel like you’ve been glutened, even if you’re certain you’ve had none.
26:04 – Words of wisdom about diet and how even a gluten-free diet can cause inflammation. What is the ideal diet?
32:04 – Tips and tricks on how to reduce the amount of processed food, and why a healthy diet does not mean boring or tasteless.

Thank you for this information. I’ve been focusing on more fruits and vegetables in my diet and this motivates me to do even more to avoid processed foods. I’m trying to alleviate pain from osteoarthritis and to reduce the dangers of osteoporosis. This podcast offers valid reasons to further improve my diet.
Wait a second. 31 minute. “We are not designed to eat dairy.” ie, we are not baby calves. But, this Dr. does believe we are “designed” to eat meat? That’s obviously false. We are not designed in any way shape or form to eat flesh. She’s still evolving, which is fine.
Anyway, great podcast on gluten, much thanks.
About 50% of people sensitive to gluten cannot tolerate dairy and a large majority of people lose their ability to break down the sugars in milk at a young age. So, in many respects what she is saying about dairy isn’t all that controversial. However, the human body is evolved to consume animal protein. Whether a particular person can tolerate it or not is really what may make the difference, however not all of us can survive AND thrive eating only plant foods. One’s diet should be unique and serve that particular person’s needs. Beyond that, we’re only speaking about diet from a purely philosophical perspective that doesn’t account for unique individuals. But hey, that’s just my own two cents! Thanks for listening!
Hi Jennifer,
Is the product made by Nestle – Boost – O.K. to use on a gluten-free and paleo diet?
Thanks,
Dian
Dian, I honestly don’t know if it is. It’s always best to call the company directly to find out what’s the most accurate information on a food product. I’d assume it’s definitely NOT paleo.
