I love pumpkin and couldn’t believe that this gluten free dairy free pumpkin pie pudding could actually be… healthy! But it totally is and will delight anyone who’s looking for a yummy dessert without all the gluten-free junk.
This recipe is really easy to make and can be made in advance of a party! You can easily make single-serving ramekins or cups so that everyone sticks to a reasonable amount (though I’m willing to bet you’ll get requests for seconds and the recipe!).

- 2 Cups Coconut or almond milk
- 1/2 Cup Coconut palm sugar (or cane sugar)
- 1/4 Cup Kudzu
- 1 Cup Pumpkin puree
- 1/4 Tsp sea salt
- 1/2 Tsp Pumpkin pie spice (adjust to taste)

- Combine milk, sugar, kudzu, and puree in a medium sized pot on the stove.
- Over medium heat whisk continuously until mixture begins to boil. Do your best to break up all the chunks so that the pudding thickens as it becomes smooth.
- Add salt and spice (to taste).
- Pour pudding mixture into ramekins.
- Place in the refrigerator until cool and firm.
What can I substitute for kudzu? Rice or almond or coconut flour? I assume it’s a thickener. I don’t eat corn (cornstarch). Thank you! This sounds great.
Vicki, I’d just suggest going on Amazon and ordering this… yes it’s a thickener. It’s a natural starch… not some chemically derived option. You can’t use a GF flour in it’s place. You could try Arrowroot if you have that though.
