
If you know me, you know that I love salads, and my Apple Cashew Salad Recipe is definitely at the top of my list! It’s actually perfect for any season of the year (though for some reason I tend to make it more in the Autumn).
Pairing together apples and crunchy cashews, this is one of the few salads that my picky “I don’t like salads” husband will actually eat. (And he even asks me to make it periodically!)
This salad is low in sugar (and definitely safe if you’re doing the Gluten-Free Sugar Cleanse).
It’s also loaded with healthy fiber and fats. There’s also some protein with the help of the cashews that add a salty crunch.
This Apple Cashew Salad recipe is a great way to expand your salad options. You can also add some additional lean protein if you want such as grilled chicken or a filet of white fish. (I’ve included some good recipes to pair this with below!)
Apple Cashew Salad Recipe Ingredients
A couple of things to keep in mind when you’re picking your veggies —
Apples are notoriously high in pesticides.
That’s why I always recommend buying organic apples whenever possible.
If the skin of the apple is waxed, then I’d recommend peeling your apple. If it’s not, then leave the skin on for added fiber.
The other reason to remove it would be if you have trouble with apple skins or too much fiber.
Also, you’ve got to buy cashews that are clearly marked gluten free.
Though I’ve heard all the jokes about how everything is getting labeled gluten free, nuts are often contaminated not just with gluten, but also with wheat and other allergens.
In fact, it’s pretty hard to find nuts in the grocery store that AREN’T contaminated.
And having no warning on the packaging is not acceptable at all. (And no, the bulk bins are not a safe spot to buy anything if you’re gluten free.)

- 4-5 cups romaine lettuce chopped
- 2 entire Cucumbers deseeded & chopped
- 1 whole Avocado cubed
- 1 entire granny smith apple chopped
- 1/2 cup roasted salted cashews chopped
- 3-4 pinches sea salt
- 2-3 dashes white pepper
- 1 tsp dried oregano
- 4 tbsp Extra Virgin Olive Oil
- 1.25 tbsp Balsamic Vinegar

- Place the lettuce, cucumbers, avocado, apple and cashews in a large bowl. If you're concerned about presentation, add them into the bowl one at a time in the order listed herein (starting with the lettuce on the bottom).
- In a small bowl, add your olive oil and balsamic vinegar first. Then add the other spices and herbs. Use a fork and whisk together. (If you have a small jar, you can put all of these ingredients in there and then seal and shake the bottle to mix them).
- Taste the dressing before adding it. You can make any adjustments before topping your salad.
- When you're ready to serve the salad, pour the dressing overtop and then mix everything up so that everything is evenly coated.
