I had the incredible pleasure to meet a woman who has answered your prayers. Her name is Amber Beam and she realized that the steps between planning and cooking needed to be addressed when developing a practical cookbook for the “regular Jane.”

This book is unpretentious, informative and intelligently laid out. Amber literally thought of all the steps you’d need to do and let’s you know what preparations to do ahead of time (like on Sunday when you’ve got a bit more free time) to get certain key timesavers out of the way.
With nine weeks of restaurant-quality meals under your belt, you can then either start over to week one or perhaps begin to use Amber’s simple system to plan out your own. Truthfully, what Amber has done in “Weeknight Paleo” is to give you a food road map that will guarantee good food on the table.
And another plus, most of the ingredients in the recipes are spices and herbs (nothing too fancy or complicated to overwhelm a finicky palette) that properly season a handful of main ingredients. Great eNewsletter today. One of my favorite GF Recipes is vegetarian Nicoise salad. It is fantastic for this time of year with beets, potatoes, green beans, and a hard-boiled egg for protein as the main ingredients. You can prepare everything ahead of time and dress it on the night you want to eat it. Fabulous!
Oh I would lo love to have this book. Planning is my worst enemy. And something that my husband will enjoy also is a goal of mine. Thank you to both of you for giving us this opportunity it’s for this wonderful help.
So far my favorite gf dish is actually a desert. I made key lime pie bites that were fantastic. And nobody really even knew how good they were for them. I ended up with quite a bit of filling left so I froze it into popcicles that are amazing when I have a sweet craving.
fav gf meal right now is crockpot chilli verde!
Roasted veggies. They are best in winter, but even in the summer I’ll make a batch. Carrots, yams, beets, onions, garlic…. whatever is around. A little olive oil and the oven. Over brown rice or just as is. Warm and gooey.
I have so many favorites, probably a toss up between a meatball soup I make and a delicious quinoa pasta with black beans & tomatoes, yum!
I need this badly. I am the worse planner for cooking. I try on Sundays and run out of options on Tuesday!
One of my favorite gf dishes is potato pancakes made with cauliflower and rice flour instead of potato and white flour.
My fave dish is stuffed acorn squash, while my daughter enjoys the nights when we have spaghetti squash mixed with any type of hamburger dish. 🙂

My favorite gluten free food is shrimp scampi with fettuccine style rice noodles by Tinkyada.
I have been gluten free for over 4 years. I use pans and utensils from before,but I don’t use wooden spoons or the same utensils in my food . My question is I don’t feel good. My eyes are hard to focus and water all the time. I use a c-pap to sleep,but can fall asleep without even a moments notice. I am lethargic and depressed. Had menopause at 50 and a stroke at 42,caused by a clotting disorder. I am also overweight.265 at 5’7”. I am taking blood pressure medicine,anti-depressant,probiotic and b-12. I have seen an allergy specialist all is o.k. I have dry hair and skin sores that don’t heal,sores in my mouth,borderline diabetic,bourderline high chorlesteral. Do you have any sugestions for me? I live south of Buffalo,NY and my area isn’t very well versed in Celiac.
I love making chicken lettuce wraps. Currently I do add rice and corn in it. I am slowly starting to faze out dairy and grains from diet since reading about how they can still damage your system and I would love to have a paleo cookbook to make different dishes and really take my meal planning to different levels. Right now, it is pretty basic.

I have been having so much fun making gluten-free and Paleo recipes. Last week, I made a fantastic Chocolate Strawberry Muffin with Almond and Coconut flour. It was actually supposed to be a donut, but I improvised. Perfect morning snack!! Very filling!

My favorite gluten free dish is blanched green beans, cucumber, and tomatoes covered in olive oil, lemon, and salt. It’s delish and filling.

I found out that I have Celiac about 5 years ago but since I am the only one that eats gf I find it hard to find really good recipes that are easy to fix especially for one. I love you webpage and all the info you put on it, Thanks so much
